For the lentil soup with ginger, first soak the lentils overnight and rinse the next day and drain well.

Peel and coarsely chop the potatoes, carrots and onion. Peel the ginger and grate finely.

Cover the vegetables with water in a large enough pot and cook until tender. Puree finely.

Bring the vegetable soup to a boil and cook the lentils in it until soft. Keep skimming in between. Add vegetable puree, orange juice, olive oil and spices and stir the lentil soup well with ginger.

Preparation Tip:

Serve the lentil soup with ginger sprinkled with fresh herbs, such as cilantro or parsley.
