For the buttermilk mousse, soak the gelatin in water, squeeze out and dissolve in the warmed orange juice. Remove from heat and stir in a few spoonfuls of the buttermilk.

Scrape the pulp from the vanilla bean. Stir the remaining buttermilk well with the honey, vanilla pulp and grated zest from the oranges, then gently stir the gelatin mixture into the buttermilk.

Whip the cream until stiff and fold in. Chill the buttermilk mousse overnight.

Preparation Tip:

Garnish the buttermilk mousse with orange fillets or candied orange pieces.
