For the sweet and sour vegetables with glass noodles, first soak the glass noodles in cold water. Mix soy sauce, maple syrup, ginger, water and cornstarch.

Halve the bell bell pepper and cut into fine strips. Cut green onion into rings. Roughly tear zucchini and carrots. Finely chop garlic. Cut pineapple into small pieces.

In a wok, heat peanut oil and sauté garlic briefly. Add bell bell pepper, white onion rings and carrots and fry for 3 minutes. Add zucchini, pineapple, chili and spices and fry briefly. Add water and simmer covered for 3 minutes.
