For the scones, first preheat the oven to 210 degrees (gas oven: 190 degrees. Grease a baking tray with melted butter or oil. Sift flour into a large bowl, add sugar. Using your fingertips, rub the butter pieces into the mixture until it resembles breadcrumbs.
Make a dent in the center of the mixture and pour in milk. Mix to form a soft, slightly sticky dough.
Transfer to a floured surface and knead together lightly. Pat or roll out into a 2-inch-thick layer of dough. Using a round cookie cutter (6 cm diameter), cut out scones and place close together on greased baking sheet.
Brush with beaten egg. Bake for 15-20 minutes. Serve the scones still hot with jam and whipped cream.
Preparation Tip:
You can also mix 50-75 g of raisins into the dough for the scones.
