For the sponge cake roll, first line a baking tray with baking paper and preheat the oven to 190 °C.

Cream the yolks, sugar and juice of the lemon or orange, mix the flour with the cocoa, sift over it and stir in with the liquid. Beat the snow until stiff and fold in carefully.

Bake at 190 °C for about 17 minutes.

Immediately turn out onto a cloth sprinkled with sugar, remove baking paper, spread with jam and roll up. Sugar the sponge cake roulade before serving.

Preparation Tip:

This sponge cake roulade goes very well with plum jam.
