A bean recipe for every taste:
Soak beans in enough cold water for one night.
Peel the garlic and chop it finely.
Put a quarter of a liter of soaking water, drained sage leaves, beans, garlic and half of the olive oil in a heatproof dish. Season with salt and pepper.
Cook the beans in the oven heated to 125°C (fan oven 90°C, gas mark 1) for about 3 hours until the beans have absorbed all the liquid.
Pour into deep plates, drizzle with remaining olive oil.
