For the saffron rice pudding, boil water and milk, add rice, saffron and sugar too. Cover and simmer on lowest heat for 20 minutes, do not open lid, do not stir. (otherwise the rice pudding will burn).

Melt 1 tablespoon butter in a small pot, caramelize with sugar, add walnuts and deglaze with a little orange juice or water, stir through.

Arrange finished rice pudding with almonds, pine nuts and banana slices, add caramel with walnuts on top.
