For the sauerkraut pancakes, finely grate the potatoes and apple, finely chop the onion and squeeze the sauerkraut properly. Mix everything in a bowl and mix with the egg, sea salt and whole wheat flour to form a dough.
Let the dough stand for about 1/2 hour.
Cut the chives into small rolls and mix with the sour cream and some pepper.
Heat oil in a pan and fry sauerkraut pancakes in heaps from the dough. Serve with the chive cream sauce.
