Mash half of the raspberries with the powdered sugar and the buttermilk (1). Fold in lemon zest, juice of one lemon and buttermilk (2), fill into plates in portions. Form remaining raspberries into cold dish, spread buttermilk (3) as blobs on cold dish and draw a pattern with a toothpick. Sprinkle with sunflower seeds and bring to the table ice cold.
