For the earthenware pralines, press the potatoes through a potato ricer and mix with butter, spices, egg yolk and enough flour to make a dough that is not too loose.
With floured hands, take small balls of the mixture and roll into dumplings. Fry the potato dumplings rolled in breadcrumbs in plenty of fat in a frying pan or deep fryer until golden brown.
