Carrot Olive Oil Cake in Glass

For the carrot olive oil cake in a jar, first mix the carrots with sugar in a bowl until well blended. Beat eggs with a hand mixer until foamy and mix in. Add olive oil and vanilla. Add spices and baking soda to flour and stir into egg mixture until well combined.

Grease Rex jars well with lukewarm butter, pour mixture into jars up to the center and bake in preheated oven at 180 °C for about 20 to 25 minutes. Test with chopsticks.

Serve the carrot and olive oil cake in the jar sprinkled with powdered sugar.
